Below is a sample from the Indian Cuisine:

Curry Chicken:

750 g boned chicken 1½ teaspoon grated ginger 1 tablespoon gr. Coriander
3 tablespoons ghee or oil 1 cinnamon stick 2 teaspoons garam masala
1 large onion thinly sliced 2 cloves ½ teaspoon turmeric pepper
1 teaspoon mashed garlic 2 dried chilies lemon juice
2 bay leaves 2 cardamoms  
1. Brown the chicken pieces in ghee or oil remove and set aside. Fry the onion until golden brown, add garlic, ginger, cinnamon, bay leaves, cloves, cardamoms and chilies and fry for two minutes, stirring. Add ground spices and pepper.
2. Return the chicken and add water to barely cover. Cover the pan and simmer for about 40 minutes until the chicken is very tender. Add lemon juice to taste.

Serve with rice and a tart-sweet chutney.
